This light and easy 4-ingredient risotto has Italian roots, but without the fuss. Oven Baked Risotto is an uncomplicated diabetic-friendly side dish that pairs well with just about anything. Stir the ingredients together and pop in the oven for a wonderful, fast recipe. Be sure to look for this particular Arborio or risotto rice as it has a special creamy texture. Serve as a side or top with your favorite ingredients, such as leftover chicken, basil, tomatoes, and mozzarella to turn it into a quick and fresh meal.
