Chicken meatballs are easy to make ahead for dinner throughout the week. This recipe uses applesauce to make them extra moist, and the flavor is from herbs and spices instead of salt and pepper. With no added salt these chicken meatballs can be enjoyed by the whole family, baby included!
Try these over spaghetti or spaghetti squash, as a meatball sandwich, or place a toothpick in them to serve them as an appetizer at your next event! Another reason I love these meatballs is because they freeze well. Keep these cooked in your freezer so that you always have them on hand.
Chicken Meatball Recipe
Ingredients:
1 lbs of ground chicken breast
1 egg
½ cup of breadcrumbs
¼ cup of unsweetened applesauce
½ teaspoon of garlic powder
½ teaspoon of thyme
Directions:
1. Pre heat the oven to 350 F
2. Place all of the ingredients together in a bowl and mix together.
3. Form mixture into balls and place each ball on a greased baking sheet.
4. Bake in the oven for ~20 minutes or until the chicken is completely cooked through.
5. Enjoy!
