In less than five minutes you can enjoy this tasty apple pie-inspired dessert that just happens to be healthy. You'll enjoy rich apple flavor along with a boost of fiber.
You can make this in any microwave-safe mug, bowl , or ramekin. Feel free to enjoy right out of the bowl you make it in or transfer to a pretty dessert cup. This is delicious as is, but if you want to add more staying power or to turn this into breakfast, add plain Greek yogurt, cottage cheese, or your favorite nut butter.
Healthy microwave apple pie for one
Serves 1
Ingredients
1 apple, chopped
1/4 teaspoon vanilla extract
1 teaspoon pumpkin pie spice (or 1/4 teaspoon each cinnamon, cloves, ginger, and nutmeg)
1 tablespoon rolled oats
Directions
1. Toss ingredients together until well combined in a microwave safe mug or bowl.
2. Microwave in 1-minute intervals, stirring in between, until apple slices are soft. This should take 2-3 minutes total.
Allow to cool before eating. Enjoy plain or with desired toppings.
